Cod in vegetable sauce (Bacallà amb sanfaina). This dish is a traditional way of cooking cod in Andorra and Catalonia.
* 1kg of cod fillet
* olive oil
* red pepper
* green pepper
* ripe tomatoes
* 1/4 of a liter of fish broth
How to prepare the dish:
Heat the olive oil in a deep frying pan and dip the cod fillets into the flour batter to cover it completely. Put it to the pan to fry and leave on a low heat.
In a separate pan heat olive oil then add the diced vegetables – red and green peppers, eggplant and zucchini.
Mix with finely chopped onions and garlic, and add the grated tomatoes.
Fry until tender.
When the cod is ready, add the vegetables, drain off the excess oil and pour in the hot fish broth.
Cook on a low heat for 15 minutes.
Spread into a deep dish, decorate with peas, chickpeas and finely chopped fresh parsley.
